I like the high temp cheese, it holds up well, it doesn't cook out, I used 1 lb. for 20lbs of cased sausage, and you can see it is a nice ratio of product, I added it to my ground meat, in my Lem Meat Mixer and it mixed evenly. I recommend this cheese to everybody.
Best product on the market for processing wild game, the various high temperature cheese adds flavor to venison like you wouldn't believe. I use LEM products for processing, preserving and packaging all the deer meat I bag during deer season. Try their kits and follow the directions as indicated and you will have a freezer full of award winning meats.
High Temp Cheese
Great flavor. Doesn't melt in the smoker. Added with serano peppers, made my summer sausage taste great.

Great addition to my recipe.
I had previously made a batch of summer sausage using regular cheddar cheese. It was good but cheese melted and ran through the finished product. In the second batch the high temp cheddar, which arrived already diced worked great, retained its shape through the cooking process and improved the taste. I will use this product in the future and try other cheese flavors.

use all LEMs high temp cheeses a lot. tried a cheaper brand, but was not as good.
Excellent Flavor and Easy to Use
Added some Hi Temp cheddar to a LEM Summer Sausage kit and it was wonderful. The cheese was easy to add in to the product, i had expected it to clump together some, but it separated beautifully. Smoked the sausage to an internal temp of 165 and the cheese held up. Added really good flavor and texture to the final product. Will be buying much more of this in the future.
