Crafted from beef protein, fresh collagen casings are used specifically for making fresh sausage. They are durable, hold up well when hung in a smokehouse, offer a consistent color and texture, and provide a satisfying snap when cooked. With no soaking required, these casings are ready to use as soon as you are. Come rolled in strands; each is approximately 50' long. Edible.
 
Choosing the Right Size Casing:
21mm are great for breakfast sausage links, and 32mm casings are ideal for Brats or Italian sausage.
