Ingredients:

  • 1 tablespoon olive oil
  • 3 cup tomato sauce of canned whole tomatoes, with their juices
  • 1 yellow onion, chopped
  • 1 cup distilled white vinegar
  • 1/2 cup honey or brown sugar
  • 1 teaspoon dry mustard
  • 1 teaspoon ground cinnamon
  •  Pinch of ground cloves
  •  Salt
  • 2 celery stalks with leaves, cut into 8 pieces total
  • 3-4 tablespoon chipotle hot sauce

Directions:

Heat the oil in a saucepan over medium heat, and saute onion until starting to brown. Add the tomato sauce, vinegar, honey, dry mustard, cinnamon, cloves, salt, and stir. Add the celery pieces and hot sauce, and bring to a boil over medium heat. Reduce the heat to simmer and cook for 30 minutes.

Remove from the heat and puree in a blender or food processor, then return the mixture to the stove-top and simmer until you reach the desired consistency.

Makes 3 cups.
