This product is used in cooked or smoked sausages to help retain the moisture in the meat and prevent shrinkage during smoking or cooking. Also works well for fresh ground meat patties and meatballs. It is very high in protein which makes it an excellent binder, giving your finished sausage a smooth, moist consistency. Contains no cholesterol and is essentially free of fat because it is derived from a vegetable source. Use 1 lb for 50 lbs of meat, or 2 teaspoons per pound.
