Our Backwoods high temperature cheese is a great item for sausage making. Add cheese to your sausage and give it something extra. Cheese will stay in chunks up to 400 degrees. Add about 10% cheese (1 lb. of cheese to 10 lbs. of meat). Cheese will last up to 12 months at 32 degrees F to 45 degrees F and can be frozen. Add to meat and sausage seasoning while mixing, and cook as usual. Comes in 1 lb. bags in cheddar, hot pepper, and mozzarella flavors. Gluten free. Refrigerate upon receipt.

Greatest flavor
I used this cheese last year and it was a favorite among my customers. This year when I was ready to order they were out so I ordered another cheese from a different company, not even close in flavor. Final results, I ordered from LEM when it became available again and I will never change back.

So Good
Use this in fresh breakfast sausage mix from lem. Adds a good bit to links. Tried other brands,just not as good as this cheese.

Excelent flavor
Is awesome mixed in with the smoked brat flavored mix. Has a good heat not too much but enough to leave a slight burn in the back of your mouth.

Tastes Great
I have visited the site a couple of times and wanted to try the cheese, but was put off by the - too hot- review. Well this time, I got the Habanero cheese- and while there is heat, it isn't burn your mouth heat... I made chizoro sausage and put half mozzarella and half Habanero- talk about Delish!! MMMMM... I would certainly recommend this cheese as well as the Mozz and Cheddar
