Tips for Game Processing
Venison, when properly cut, is totally void of fat. It is imperative that venison not be overcooked to preserve moisture and insure tenderness. The length of the meat fibers also determines tenderness. A long fiber chews tougher than a short fiber. When processing game, always be aware of the grain of the meat and in what direction it is running. Always cut against the grain when cutting chops or steaks and when carving a roast after it is cooked.
